Cannonau is a late-ripening variety which thrives in the hot, dry conditions of Sardinia. The vines are grown in the warm seaside vineyards with sandy soils and vineyards not far from the sea which are caressed by the northeast winds, which have a moderating effect.
The grapes were fermented with selected yeasts at controlled temperatures of 18 to 28°C in stainless steel tanks. Maceration lasted for two weeks to extract the desired level of aromatic expression, flavour and colour. The wine was aged for several months in stainlesssteel tanks, retaining the bright fruit flavours, resulting in a fruit-forward Cannonau full of finesse with intense aromas of ripe, red fruit
