INFO: The two base wines of Macabeo and Parellada were vinified separately. The grapes were chilled to preserve the aromas contained in the skins and to avoid any oxidation. The first fermentation took place at 16°C, and the base wine was blended. The blended wine then underwent secondary fermentation in the bottle, as per the traditional method, during which the characteristic bubbles were produced. Ageing for nine months on the lees added subtle complexity.
An aromatic, fresh and fruity Cava, with a lively mousse and a refreshing citrus character with delicate floral complexity through to a long, crisp finish.
