Assyrtiko really is the Greek white variety to watch out for. It became known for its crisp, vibrant freshness, but it can do a lot more. It's always got great acidity, which means it's wonderful with seafood, but it also has a lot of texture and body to it, so it'll handle pork and chicken too. A real tangy bite shows off its minerality and just a hint of spritz giving it some real lift.
