INFO: From some of the best vineyards in the Roussillon, this distincively French white wine is crafted from native varietals to the region, usually a blend of Colombard, Vermentino, Marsanne or Grenache Blanc. The soils are rich in clay and silt.
A traditional white wine fermentation follows a direct pressing and racking in stainless steel without carbonic maceration. There is no oak ageing
Slightly floral on the nose with a hint of minerality and pastry. Honeysuckle, peaches and herbs shine through supported by lovely texture, depth and weight. A salivating mouth, which is slightly saline and with juicy pear notes. This stands up well to rich paté, creamy sauces and white meats.
