REGION: Duero, Spain
VITICULTURE: Biodynamic principles
Tempranillo grapes grown at altitude (over 1000 ft) in the Duero region of Spain (near Madrid) pruned to give low yields (4 tonnes/hectare). Following biodynamic principles the berries are cool macerated, fermented naturally at low temperature then left on the skins giving huge extraction of fruit whilst maintaining freshness and acidity. Aged unobtrusively in oak to give rounded tannins and good structure, it has huge aromas of black cherry and violets, very chewy with notes of liquorice. Open two hours before drinking. Drinking now it will keep getting better over time. If you like the structure of Rioja but love freshness of fruit, this is a must buy wine.
