There's no denying that no or low sulphur wines are becoming more and more popular. Our resident winemaker, Ian, is a little perplexed at the amount of hype, hysteria and often misinformation circulating about sulphur in wine, but here isn't the place to go into that! On a technical level, it's remarkably difficult to produce a wine with no sulphur that still smells fresh and fruity - the aromas are exactly the things that sulphur is added for to protect. Which is why it's so nice to see this vibrant, fresh, intensely flavoured sparkler produced with as little intervention as possible. No pesticides, no yeasts, no sulphur.
