Due to the age of the vines the yields are lower and the wine more complex and concentrated.   To produce the Amarone the grapes are dried until for between 3 and 6 months before being crushed, destemmed and then slowly fermented  with lots of maceration, producing a depth of colour and flavour. The wine is left to complete Malolactic fermentation in oak casks and barriques and then matured 90% in large oak and 10% in barriques for 24 months.
