INFO: Scarnocchio is the oldest and highest part of the Monte Del Fra vineyards at over 380 metres above sea level. Due to the age of the vines the yields are lower and the wine more complex and concentrated. To produce the Amarone the grapes are dried until for between 3 and 6 months before being crushed, destemmed and then slowly fermented with lots of maceration, producing a depth of colour and flavour. The wine is left to complete Malolactic fermentation in oak casks and barriques and then matured 90% in large oak and 10% in barriques for 24 months. It is then kept in bottle for 14 months or so before release.
